Specifically, the weapons that cannot be reassembled are the Probe Gun and the Planet Cracker DLC, the Probe Gun being an objective item and the Planet Cracker due to a bug.

Be warned, though, that certain weapons cannot be put back together once disassembled due to Development deeming the bugs "Won't Fix" priority. Despite being "pre-built", these weapons are still made up of standard components and can be dismantled for parts or altered as you see fit.
